Welcome to another look at what’s on the menu for my family this week. As always we have pizza on the menu! I am vegetarian, although Ian eats fish, so it’s pretty much a vegetarian meal plan. You can easily change the main ingredient to a meat option if you prefer.
I have changed the day that I’ll be posting the meal plans, as last week it was Ian’s birthday on Wednesday so we’ve had a meal out and a few cheeky takeaways. Because of that there are just 6 meals listed this week. Also, I think it makes sense to post on a Monday!
WEEKLY MEAL PLANNER #6
1. Thai-flavoured mushroom stroganoff & golden rice
(Mushrooms in a lemongrass, lime, ginger and coconut sauce served with turmeric rice)
2. Kedgeree with eggs and tarragon butter
(Boiled eggs with a spicy rice & lentil mix topped with tarragon butter)
3. Laksa
(A spicy Malaysian soup with vegetables and rice noodles)
4. Tagliatelle with creamy spinach & nutmeg sauce
(Sautéed spinach, onion & garlic with a nutmeg & cream sauce, stirred through tagliatelle)
5. Spicy bean cakes with homemade chips
(Bean cakes made with kidney beans, onion, chilli & coriander)
6. Pizza!
